This video will show you how to cook Crispy Lechon Belly using a conventional or traditional oven. The result is a crispy and tasty rolled pork belly that you can enjoy with or without any dipping sauce. Filipino lechon belly is best eaten with rice. You can also eat this with a side of pickled papaya (atcharang papaya).

Ingredients
6 lbs. whole slab boneless pork belly
1 large bunch lemongrass pounded
1 large bunch scallions

Rub ingredients:
1 tablespoon salt
1 1/2 tablespoon garlic powder
1 teaspoon ground black pepper

Ingredients for steaming:
7 pieces star anise
1 medium red onion wedged
1 pint water
