Dear Friends, Ever wondered why the curd rice in hotel or marriage lunches is so creamy & tasty. I have provided the secret tips & ingredients to prepare the same creamy & delicious curd rice at home itself. If you pack curd rice as lunch it will get dry & sour after few hours but if you follow this recipe it wont get dry at all. it will be fresh & creamy even after several hours. Enjoy the recipe.
Ingredients:

Rice- 1 cup
Milk- 1 cup
Curd- 3/4 or 1 cup
Fresh cream- 1/4 cup or Butter- 1 tsp
Carrot- 1/2 cup
Raw Mango
mustard seeds- 1/2 tsp
Urad dal- 1 tsp
Chana dal- 1 tsp
Dry red chillies- 2
Green chillies- 3
Ginger
Curry leaves
asafetida- 1/4 tsp
Coriander leaves
Oil
Salt
Preparation:

Take 1 cup rice in a pressure cooker, 2 cups water & 1 cup fresh milk. Use the same cup for all measurements.
Once it started boiling well close the lid. Maintain medium flame & cook it for 3 whistles. rice will cooked to mushy consistency.
Wait till the rice become cold. do not add the curd when it is hot. Use a spatula & smash the rice well.
Add 1 glass water while mashing the rice, this will avoid lumps formation in rice.
Add required salt, 3/4 cup or 1 cup curd & mix it well.
Add 3/4 cup milk if you are going to pack it for lunch and consume after 4 or hours. Otherwise skip adding milk.
if you want to get hotel style creamy curd rice, add 1/4 cup fresh cream. This is the secret ingredient. If you do not have fresh cream add 1 tsp butter when rice was hot
Adding fresh cream or butter will add nice aroma to the curd rice & make it even more tasty.
Add 1/2 cup grated carrot, finely chopped raw mango. these are optional only. you can add fresh grapes or pomegranate if you like.
We will do the tempering process now. In a heated pan add 1 tsp oil once it is heated add 1/2 tsp mustard seeds, 1 tsp urad dal, 1 tsp Chana dal.
Add dry 2 red chillies & saute well. once its sautéed well add 3 finely chopped green chillies, grated ginger, curry leaves & saute well.
Another important ingredient for curd rice is asafoetida. Add 1/4 tsp asafoetida & mix it well.
Leave the oil & add only sautéed things to curd rice once its cooled down a bit. if you add the hot oil to the curd rice it will curdle. so don't do it.
Finally add freshly chopped coriander leaves to this & mix it well. This will tastes awesome with Potato fry or mango pickle.
