WOW!!!! Just THREE ingredients make this satisfying, super tasty Open Chicken Omelette! A superb brunch dish!
The eggs are semi-deep fried to create a base for deep fried, sliced chicken breasts and some chopped scallions! That's it!!
SO SIMPLE :)
Fantastic low budget food for you to try at home! The eggs done this way are really delicious - give it a go this week and see for yourself!
Ingredients:-
250 - 300g chicken breasts, sliced
4 large eggs, beaten
2 scallions, chopped
Method:-
Deep fry sliced chicken breasts till golden and cooked through, remove and drain on paper towel.
Sieve remaining oil of any impurities from meat, use ~ half of this remaining oil to semi deep fry the beaten eggs.
Move about whilst cooking, without flipping over.
When egg is almost cooked through add chopped scallion followed by cooked chicken.
Move about a little from underneath with wok chan until egg is cooked through.
Drain off excess oil and plate up.
Season to taste.
Decorate with more scallions and onion flakes, (optional).
DONE!!
