Learn how to make Vegan Rice Kheer | Payasam | Indian Dessert Recipe by Manjula
Ingredients:
1 ½ cup cooked rice
3 cup almond milk unflavored
2 cup coconut milk or 14 oz can
⅓ cup sugar
2 Tbsp almonds sliced
2 Tbsp pistachios crushed
1 Tbsp raisins
¼ tsp cardamom powder
Few strands of saffron
Instructions:
-Lightly mash cooked rice.
-Use a heavy-bottomed pan.
-Put all ingredients (except saffron) in the pan: rice, coconut milk, almond milk, sugar, almonds, pistachios, raisins, and cardamom powder.
-Mix well and bring to a boil on medium-high heat.
-Once boiling, reduce heat to low-medium and cook for 20 minutes, stirring occasionally.
-Adjust thickness to your liking.
-Turn off heat and add saffron on top.
-Serve warm or chilled.
