Pepper Chicken Recipe

Ingredients:

Chicken:
500 grams of boneless chicken, cut into bite-sized pieces
Marinade:
1 tablespoon soy sauce
1 tablespoon lemon juice
1 teaspoon black pepper powder
1/2 teaspoon salt
For the Pepper Masala:
2 tablespoons black peppercorns
1 tablespoon cumin seeds
1 tablespoon coriander seeds
4-5 dried red chilies
Other Ingredients:
2 tablespoons oil (vegetable or olive oil)
1 large onion, finely chopped
1 tablespoon ginger-garlic paste
2 green chilies, slit
1 tomato, finely chopped
1/2 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Lemon wedges (for garnish, optional)

Instructions:
Marinate the Chicken:

In a bowl, combine the chicken pieces with soy sauce, lemon juice, black pepper powder, and salt.
Mix well and let it marinate for at least 30 minutes.
Prepare the Pepper Masala:

In a pan, dry roast black peppercorns, cumin seeds, coriander seeds, and dried red chilies on medium heat until fragrant.
Allow the roasted spices to cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
Cook the Chicken:

Heat oil in a large pan or skillet over medium heat.

Add the chopped onions and sauté until they turn golden brown.

Add the ginger-garlic paste and green chilies, and sauté for another 2 minutes until the raw smell goes away.

Add the chopped tomato and cook until it turns soft and mushy.
Add turmeric powder and the prepared pepper masala to the pan. Mix well.
Add the marinated chicken pieces to the pan and mix them well with the spices.

Cook on medium heat for about 10-15 minutes, stirring occasionally, until the chicken is cooked through and the masala coats the chicken pieces well.

Add garam masala and salt to taste. Mix well and cook for another 2-3 minutes.
Garnish and Serve:

Garnish with freshly chopped coriander leaves.
Serve hot with steamed rice, roti, or naan.
Optionally, serve with lemon wedges for an extra tangy flavor.
