Mississippi Pot Roast with Cream Potatoes, Green Beans and Strawberry Shortcake

Marie is making a special dinner for Calvin. This Mississippi Pot Roast is the very best around.
She is also making home made cream potatoes and green beans cooked with bacon grease that is spectacular. For dessert Marie is making strawberry shortcake. We hope that you enjoy this video.

Mississippi Pot Roast
Ingredients
• 1 3 lb. chuck roast
• 2 tbsp. olive oil or vegetable oil
• salt & pepper to taste
• 1 packet ranch dressing mix
• 1 packet dry onion soup mix
• ½ cup salted butter 1 stick
• 8 peperoncini peppers
Instructions
1. Heat up a large skillet on high. Add oil to hot skillet. You want it really hot here to brown or "sear" the beef quickly.
2. Take a paper towel and make sure you dry both sides of the pot roast. Season with a little bit of salt and pepper. Once the skillet is nice and hot, add the roast.
3. Using tongs, flip the meat over and sear the other side of the roast for another 2-3 minutes.
4. Transfer meat to slow cooker. Sprinkle packets of dry ranch dressing and onion soup mixes over pot roast.
5. Top with a stick of butter then place peppers on and around roast.
6. Cover and cook on low for 8 hours.
7. Take two forks and start shredding the meat. Discard any big fatty pieces.

10. Add ½ can of beef broth for extra gravy
11. Add 1 pack of brown gravy mix for darker gravy


Cream Potatoes
Ingredients:
8-10 potatoes peeled and cut into 1 inch pieces
6-8 ounces softened cream cheese
½ stick butter
¼ cup of milk or more to get desired consistency
½ tsp salt
½ tsp black pepper
Parsley flakes

Directions:
Peel and cut potatoes into 1 inch pieces and wash
Place potatoes in a pot and bring to a boil
Reduce heat and simmer potatoes for about 15 minutes until tender
Drain potatoes and place in a mixing bowl
Add cream cheese, butter, salt and pepper and mix well
Add milk and continue mixing until desired consistency
Place potatoes in your serving dish
Put a couple slices of butter on top of potatoes for looks
Sprinkle some parsley flakes over the top
Serve and Enjoy !!!

Green Beans
Ingredients:
3 cans green beans
5 slices bacon
16 oz. chicken broth
1 tbsp. garlic powder
1 tbsp. Soy sauce or Worcestershire sauce
2 tbsp. brown sugar
2 tbsp. bacon grease

Directions:
Cut bacon into pieces and fry
Put fried bacon on a paper tower to drain
Drain the green beans and place in a sauce pan
Add chicken broth, garlic powder, soy sauce, brown sugar and bacon grease to the beans
Add water to cover the beans
Boil the green beans for about twenty minutes
Serve the green beans with bacon bits on top
Serve and enjoy !!!
