Let’s go around the world with Food! Our first stop is Lebanese food and we will make Falafel Hummus Shawarma. To make the Falafel Hummus Shawarma wrap, we will make everything from scratch. We will make falafel recipe, hummus recipe, tahini, hot sauce, garlic sauce and the dough to make the falafel wrap.
The falafel hummus shawarma is basically a street food and can be enjoyed on the go, in the school tiffin, teatime snacking.
The Falafel Recipe, the Hummus Recipe both are made with Chickpeas and is a completely vegetarian recipe.
To make the falafel wrap, the hummus is spread on the flat bread. Then you may add lettuce leaves, falafel, drizzle the hot sauce and the garlic sauce, the homemade tahini. Wrap up tight in butter paper and serve!

Recipe :

Falafel Hummus Shawarma
For Falafel
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 3-4

Ingredients:
1 cup Chickpeas
6-7 cloves Garlic
1 Bunch Parsley
Salt to taste
2 tbsp Sesame seeds
2 tbsp Flour
Oil for frying

Method:
Wash the chickpea and soak for 7-8 hours or overnight.
Drain the water and transfer in a food processor with garlic, salt, parsley and blend using a pulse mode. The mixture should neither be too coarse nor too pasty.
Add flour and sesame seeds and mix well. Refrigerate the mixture for 10 minutes.
Shape mixture into patties.
Heat 1” oil in a pan. fry the falafel on medium heat until it's crisp and golden brown. Remove and set aside.

Tahini
Preparation Time: 10 minutes
Ingredients:
1 cup White sesame seeds
¼ cup Olive
½ tsp Salt
Method:
In a pan, toast the white sesame seeds until fragrant and the colour changes slightly.
Immediately transfer the toasted sesame seeds in a blending jar and blend with olive oil, salt to make a fine paste. You may need to add more olive oil if required, to get the desired consistency.

For Hummus
Preparation Time: 10 minutes
Cooking Time: 20 minutes

Ingredients:
1 cup boiled chickpeas
1/3 cup tahini
Salt to taste
5-6 cloves garlic
1 tbsp lemon juice
2 tbsp olive oil

Method:
Blend together the cooked chickpea ½ cup of reserved chickpea water, ice cubes and garlic cloves, Tahini paste, salt to taste, lemon juice and olive oil grind to a fine paste.
Blend the mixture again until it's smooth in texture.
Refrigerate until it's used.

Wrap
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 2-3

Ingredients:
2 cups flour
½ tsp salt
2 tbsp olive oil

Method:
Add salt to the flour and knead a very soft, smooth dough using water as required. Knead for at least 7-8 minutes. Add the olive oil and knead till all the oil is incorporated. Rest the dough for 20 minutes. Knead again for a minute. Break tennis sized balls and roll out into large rotis. Cook on a tawa till well cooked. Remove and keep covered till required.
