KING RANCH CHICKEN QUICHE

INGREDIENTS:
• 1/2 cup chopped cooked chicken
• 1/2 cup rotel tomatoes, drained
• 1 cup shredded cheddar cheese
• 4 eggs
• 1 (10.75-oz) can cream of chicken soup
• 1/2 cup heavy cream
• 1 frozen (9-inch) deep dish pie crust
INSTRUCTIONS:
1. Preheat oven to 350ºF.
2. Spread chicken and Rotel tomatoes in bottom of frozen pie crust.
3. Top with cheese.
4. Whisk together eggs, cream of chicken soup and heavy cream.
5. Pour over cheese.
6. Bake for 50-60 minutes, until center is set.
7. Let cool for a few minutes before serving.
8. Serve and Enjoy !!!
Tip: half way through baking, I put aluminum foil tent over the quiche to prevent it from burning on the top.
