Hi everyone,

Today I want to share my baked chicken recipe with creamy mushroom soup. You can buy the cream of mushroom soup. (Don’t forget to taste test the soup. If needed, you can add extra salt, sugar and powder chicken). Make sure the soup is not too thick.

BAKED CHICKEN with MUSHROOM SAUCE (makes 2-3 portions)

Ingredients
=========================
550 ml cream of mushroom soup (with extra salt, sugar and chicken powder if desired for flavor)
¼ tsp curry powder
3 tbsp white wine
2 chicken breasts (450g), cut in half
Salt to taste (1/4 tsp-plus)
Pepper to taste
All-purpose flour to coat the chicken (about ¼ – ½ cup)
1 sdm unsalted butter for frying chicken
2 tbsp unsalted butter for frying mushrooms
8 oz (230 g) white button mushrooms, sliced
1 clove of garlic, chopped
Parsley for sprinkle, finely sliced

Preparation

⇒ Add curry powder into the soup. Mix well and heat to medium heat.
⇒ Add white wine, mix well. Soup should not too thick. Set aside.
⇒ Sprinkle Chicken with salt and pepper on both side.
⇒ Melt 1 tbsp unsalted butter on medium heat.
⇒ Coat chicken with all-purpose flour. Fry briefly until golden brown each side. Remove, place in casserole and set aside
⇒ Melt 2 tbsp unsalted butter in the same pan. Stir-fry mushrooms until slightly soft. Add garlic. Stir-fry until mushrooms are soft. Remove and place together with chicken.
⇒ Pour the soup mixture over the chicken and mushrooms.
⇒ Bake in oven preheated to 350° F for about 1 hour. When the chicken is fragrant, this is a sign that it is ready.
⇒ Sprinkle with finely sliced parsley.
