My version of El Pollo Loco's grilled chicken! This recipe was inspired by the grilled chicken served up in Sinaloa, Mexico.
Marinade:
1/2 cup rice vinegar
1/4 cup canola oil
1/4 cup lime juice
1/4 cup orange juice
1/4 cup pineapple juice
2 teaspoons ancho chile powder
2 teaspoons paprika
1 teaspoon ground cinnamon
1 teaspoon ground black pepper
1 teaspoon turmeric
1-2 pinches saflour
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cayenne
1/4 teaspoon ground clove
1/4 teaspoon ground coriander (cilantro seed)
6 cloves garlic, minced
