Ingredients:
1. Parboil Ox Tail
water - enough to submerge ingredients
1/4 cup ginger
1 tbsp - cooking wine
2.5 kg - Ox Tail

2. Simmer 30 minutes
***parboiled ox tail
7 cups - water
2 stalks - lemon grass
1 tbsp - peppercorn

3. Saute | Simmer
3 tbsp - olive oil
2 slices - ginger
1/3 cup - garlic
2/3 cup - shallots
***ox tail
2 tbsp - fish sauce| patis
9 cups - water
330 ml - sprite
1 tsp - ground pepper
1 tbsp - fremented black beans| tausi
4 tbsp - tomato paste
2 tbsp - spicy chilis
2 tbsp - peanut butter
220 grams - baked beans
2/3 cup - red chili
1 pc - beef cube
6 pcs - spicy chilis for garnish
5 stalks - spring onions for garnish

Cooking Time: approximately 4 hours
