Tortang Talong Recipe

Step 1

Poke holes in eggplant, grill on a wire gauze over open flame, cool and peel, flatten with a fork.

Step 2

Dice tomato, shallots and cilantro.

Step 3

Add salt and cornstarch to eggs, mix well, use a sieve and pour over the diced ingredients.

Step 4

Place eggplant in a big container and pour egg mixture over it.

Step 5

Heat oil in hot work; fry both sides of eggplant in medium-low heat until golden yellow.
