Brine: 1 cup kosher salt, 1 cup brown sugar, 1/8 cup whole black peppercorns, 1 tsp sage, dried thyme and basil. 2-3 bay leaves.
Brine for 8-16 hours and rinse with cold water and pat dry. Season with kosmos q dirty bird and smoke at 300 degress until you reach an internal temp of 162 in the breast. Rest for 15 to 20 mins before eating. ENJOY!
