💜COOKING HEALTHY WITH ASHLEY RECIPE

Summertime Chicken Salad

Ingredients:

4 boneless, skinless chicken thighs

1/2 cup balsamic vinegar dressing

3/4 cup avocado oil mayonnaise

1/4 cup Greek yogurt

1 tsp honey mustard

1/4 cup dried cranberries

1/2 cup chopped pecans

3/4 cup diced onion, celery, and bell pepper (trinity mix)

1/4 cup green onion, chopped

3/4 cup sweet salad cubes

1 tbsp Adobo seasoning with pink Himalayan salt

1 tbsp onion powder

1 tbsp garlic powder

1/2 tsp black pepper

1 tsp smoked paprika

1 tsp complete seasoning

Instructions:

Marinate the Chicken:

Wash the chicken thighs with cool water.

Place them in a zip-lock bag with the balsamic vinegar dressing.

Marinate in the refrigerator for 1 hour.

Season the Chicken:

After marinating, season the chicken with Adobo seasoning, garlic powder, onion powder, and black pepper.

Cook the Chicken:

Preheat your air fryer to 320°F (160°C) for 5 minutes.

Place the seasoned chicken in the air fryer basket and cook for 40 minutes.

Prepare the Salad:

Once the chicken is cooked, dice it into small cubes or shred it.

In a large mixing bowl, combine the diced chicken with avocado oil mayonnaise, Greek yogurt, dried cranberries, chopped pecans, sweet salad cubes, honey mustard, green onion, trinity mix, smoked paprika, and complete seasoning.

Mix well until all ingredients are evenly combined.

Chill and Serve:

Cover the bowl and chill the salad in the refrigerator for 1 hour.

Serve the chicken salad with crackers, as a sandwich filling, or enjoy it on its own.
