Basanti Pulao Recipe | Traditional Bengali Pulao Recipe | Sweet Yellow Rice | Anamika’s Foodcast

In this video, I will show you how to make a delicious and aromatic Basanti Pulao. This Bengali favorite is perfect for any special occasion. Follow my step-by-step guide to create this vibrant and flavorful rice dish.

Ingredients:
- 3 cinnamon sticks
- 8 cloves
- 8 cardamom
- 3 bay leaves
- 1 tsp ginger-chilli paste
- 1 tsp turmeric powder
- 2 tsp sugar
- ½ tsp salt
- 1.5 tsp ghee
- Cashew nuts
- Green chilies (optional, based on your spice level)
- 2 cups of water

Instructions:
1. Wash and Dry the rice and then add the cinnamon sticks, cloves, cardamom, and bay leaves.
2. Add the ginger-chilli paste, turmeric powder, sugar, salt, and ghee. Marinate the rice nicely.
3. Fry the Cashew nuts first then take out the fried nuts in a plate and put the marinated rice in a pan to fry in medium to low flame.
4. After 5-8 minutes, add 2 cups of water.
5. Add cashew nuts and green chilies (if using) as per your spice level.
6. Cover and let it cook for 10 minutes.
7. After 10 minutes, open the lid and stir and check whether rice has been cooked or not if required add half glass water more to boil the rice and cover the lid again for 10 minutes, after 10 minutes the nice aroma of your Basanti Pulao is coming and it’s ready.
8. Your Basanti Pulao is ready to serve.

Today, I paired this Basanti Pulao with Chicken Kosha, but you can also make it a veg dish or serve it with Aloo Dum.
