▼ Cinnamon bread 20 cm (long side width) x 7 cm (height) for 1 unit
【Ingredients】
● Yeast pre-fermentation
50ml of lukewarm water
1 teaspoon dry yeast
1/2 teaspoon sugar
●Dough
240g Bread flour
24g of sugar
4g of salt
1 whole egg
45-55ml of Lukewarm milk
12g unsalted butter
● Cinnamon sheet
20g Cake flour
60g of sugar
6g of cinnamon
60ml of milk
35g whole egg
10g unsalted butter

[How to make memo]
・Primary fermentation: Until it doubles in size (approximately 50 minutes at 30°C/86℉)
・After rerolling and letting it rest for about 20 minutes, stretch it out to 24 cm square and wrap it in a sheet.
・After stretching to about 45 cm, fold it in three and change the angle by 90 degrees and stretch it further.
・ Stretch to about 16 cm x 34 cm, leave 10 cm in front and make 6 incisions and roll.
・Let it rise for the second time, finish with a beaten egg, and bake at 180°C for about 25 minutes.
