Quick cucumber and tomato saladDiscover this refreshing and quick summer recipe for a cucumber and tomato salad! Perfect as a light side dish or as a meal on its own on hot days. Prepared in just 10 minutes and full of healthy ingredients!

Ingredients:
-1 large cucumber
-2 medium tomatoes
-1 small red onion
-fresh parsley
-1 tbsp olive oil (approx. 15 ml)
-1 tbsp lemon juice (approx. 15 ml)
-Salt and pepper to taste

Preparation time:10 minutes

Preparation steps:
1Wash the cucumber and cut into thin slices.
2 Wash the tomatoes and cut into small cubes.
3 Peel the red onion and cut into thin rings.
4 Finely chop the parsley.
5 Put everything in a bowl.
6 Add the olive oil and lemon juice.
7. season with salt and pepper and mix well.
