Finally it's time for this years first overnighter. I'm setting up my tarp and get some good food cooked on my Trangia 25.

Recipe: Creamy Sausage Orzo 2 servings

½ tablespoon olive oil
2 sausages, sliced
1 onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
½ can crushed tomatoes
1 teaspoon seasoning mix, equal parts Oregano, Rosemary, Thyme
½ cup orzo/risoni
½ cup heavy cream
½ cup spinach, or more as desired
¼ cup freshly shredded Parmesan cheese
1 pinch crushed red pepper (optional)

Directions
1. Add oil to the skillet. Turn heat to medium high heat. Add the sausage, onion and bell pepper. Cook until the veggies are softened and the sausage browns, 4 to 5 minutes.
2. Add garlic; cook until fragrant, about 45 seconds. Pour crushed tomatoes into the skillet. Stir in seasoning, orzo, and cream until well blended.
3. Reduce heat to medium low, and cook for 15 - 20 minutes.
4. Add the spinach and allow it to wilt down, about 2 minutes. Stir in Parmesan cheese, and crushed red pepper. Adjust seasonings to taste. Serve immediately.
