Paksiw na Pata Batangas Style is a dish my grandfather used to make and I grew up thinking it is Sinigang. It is not your usual paksiw where soy sauce and sugar is added but it is soupy and that hint of sourness from the vinegar pairs so well with rice. The dish is very simple to make and uses simple ingredients that is friendly on the budget. Using pork hock or pata is just right to produce that deep flavorful broth. Pressure cooking or slow cooking releases the collagen and you have a tender fall of the bone meat.
