Hello Friends,
Today I am going to cook a famous Pickle from North-East India specially from Assam. We Assamese people are seriously crazy about this Chilli named " Bhut Jolokia" & I am going to prepare a Pickle with Bhut Jolokia.

1)At first wash the chillis properly chop it into small pieces and mix it with salt as per your taste. keep it aside for 24hour.
2) Heat a pan and then take 2 Table Spoon black salt, 1 big and 3-4 small cardamom, 1 tea spoon coriander seeds, cumin seeds, azwain, roast it for 2minutes in high flame and then make a fine paste of spices it by grinding.
3)Then heat a pan, add 1cup mustard oil , 2 tea spoon cumin seeds and mustard seeds and let it fry for 1minute in high flame.
4) Then add the chillis and keep frying till it starts extracting oil. Then add 2 tea spoon ginger garlic paste and fry it for 5 more minutes. after that add 1tea spoon turmeric powder and kashmiri red chilli powder and fry it for 10 minutes.
5) Now in low flame add the roasted spices and mix it properly.Afterthat add half cup vinegar and mix it properly for 5minutes. Now switch of the gas and cover it with a lid and wait for 5 more minutes. Your pickle is ready.

Cooking Time: 45 Minutes
Preparation time: 60 Minutes
Self Life: 6 Months

Ingredients:
Raw Bhut Jolokia : 500 Gms
Black Salt: 5 Teaspoons
Mustard Oil: 1 Cup
Vinegar: 1/2 cup
Red Chilli Dry: 6 to 7
Cumin Seeds: 3 Teaspoon
Ajwain : 1 Teaspoon
Coriander Seeds: 1 Teaspoon
Mustard seeds: 2 Teaspoons
Cardamom Big: 1 No
Cardamom Small: 4 to 5
Turmeric Powder: 1 Teaspoon
Kashmiri Mirch Powder: 1 Teaspoon

Process:
