Lucknowi Style Haddi Guddi Nihari Recipe

Hello, and welcome to our channel kitchenqueenMOM Today, we're making a special and traditional dish from the heart of Lucknow—Haddi Guddi Nihari. This flavorful stew is slow-cooked with marrow bones (haddi) and tender meat, making it rich, silky, and full of aromatic spices. It's perfect for family gatherings or a hearty meal. Ingredients:

1. For the meat:

1 kg beef or lamb with marrow bones (haddi guddi)

500 grams boneless beef or lamb (optional for more meat)



2. For the spices:

3 tablespoons ginger-garlic paste

2 teaspoons red chili powder

1 teaspoon turmeric powder

2 teaspoons coriander powder

1 teaspoon cumin powder

1 tablespoon garam masala

1 tablespoon fennel seed powder

1 teaspoon black pepper powder

4-5 cloves

2 cardamom pods

1 bay leaf

1 cinnamon stick

Salt to taste



3. Other ingredients:

1 large onion (thinly sliced)

1/2 cup ghee or oil

2-3 green chilies (slit)

Fresh coriander and ginger (for garnish)

1 tablespoon lemon juice

1/4 cup roasted wheat flour (to thicken the gravy)

Instructions:

1. Prepare the Marrow Bones:

Heat some ghee in a large pot. Add the marrow bones (haddi guddi) and roast them for a few minutes until they’re lightly browned. This will release the rich marrow flavor into the dish.



2. Cook the Onions:

In the same pot, add more ghee and sauté the sliced onions until they turn golden brown. This creates the base flavor of the nihari.



3. Add the Spices:

Add ginger-garlic paste to the onions and cook until the raw smell disappears.

Now, add the powdered spices (red chili, turmeric, coriander, cumin, garam masala, fennel seed powder, and black pepper) along with the whole spices (cloves, cardamom, bay leaf, and cinnamon stick). Stir for a few minutes until the spices release their aroma.



4. Cook the Meat:

Add the boneless meat pieces and the roasted marrow bones into the pot
