How do I get the color to be more saturaturated/lighter/more pink etc.?
It depends on a lot of different things: the fiber you use, the water, the avocado, length in the dye bath etc.! If you want the color to be darker then use more avocado, let it simmer longer or dye your yarn a second time. Avocado is an organic material and therefore I can't give you an exact answer. Have fun and just play around with it!
