A very simple and quick recipe for lunch or dinner for the whole family - Stuffed pancakes. We make pancakes according to the Kalssic recipe:
Half a liter of milk, two eggs, a few pinches of salt, four teaspoons of sugar, two tablespoons of sunflower oil so that the pancakes do not burn, two glasses of flour, until a smooth mass is obtained so that no lumps form. Put the filling on the pancakes and wrap them in envelopes.
I have two types of fillings: pickled mushrooms and cheese.

Take a glass of rice, pour it into a frying pan, do not forget to pour sunflower oil beforehand, add salt to taste, pour in one and a half glasses of water, close the lid and cook for 10-15 minutes until the rice becomes crumbly. Make the filling, beat four eggs, add salt and pepper to taste, add chopped green onions and tomatoes, beat everything thoroughly. Add everything to the rice and simmer for 10 minutes.

Pour half of the mixture evenly into the pan, place cheese slices on top and cover with the other half of the mixture. Cook over low heat for 15 minutes, carefully turn and cook for another 15 minutes.
