Eggless Fruit cake ISKCON style is a very authentic fruit cake recipe from bakery of ISKCON temple, Bangalore, India.

Plum cake/Dry fruits spiced cake:

DRY MIX:

Wheat flour/Maida: 600 gm
Milk powder: 200 gm
Baking powder: 1.5 tsp
Baking soda:1 tsp

Spice powder mix : 15 gm (Mix of Cinnamon, cloves, nutmeg, cardamom, ginger powder)


WET MIX:
Butter: 300 gm
Sugar : 400 gm
Mix fruit jam : 200 gm
Fresh cream/milk : 400 ml (Approx)

Oil : 75-100 ml (Add at last just before putting in pan)

DRY FRUITS:
Cashew small pieces : 1/4 cup
Tooty fruity: 1/4 cup
Wet Dates : 8-10 pcs
Dry grapes: 1/4 cup
Dry cherry: 1/4 cup
Chopped fresh plums (if available)

Procedure:

1.⁠ ⁠Take wet mix and dry mix separately
2.⁠ ⁠Mix wet ingredients thoroughly till sugar dissolves and creamy
3.⁠ ⁠Add dry mix to wet mix
4.⁠ ⁠Add milk if required for the desired consistency
5.⁠ ⁠Add dry fruits
6.⁠ ⁠Add oil at last and gently mix
7.⁠ ⁠Put in a 9by9 inch pan or a round pan for baking
8.⁠ ⁠Baking time : only on bottom coil : 180 degrees for 30 mins (Approx)
9.⁠ ⁠For 5 mins top and bottom coil and check accordingly
