What is the "extraction temperature" to be observed?
It is no exaggeration to say that the extraction temperature of 85 degrees, as specified by Barista Hatakeyama, is the most important in this recipe. Lowering the temperature expands the strike zone and makes it easier for beginners to brew a stable and delicious coffee.

If you do not have a thermometer, try the following

(1) After boiling, open the lid of the kettle and leave it open for 3 to 5 minutes to reach a similar temperature range. (This will vary depending on the season and room temperature.

2) Or, put two or three ice cubes in the boiling kettle and drop the temperature momentarily to get closer to 85 degrees.
