I recently saw a video on the Instagram channel, That40YearOldGuy, showing how to make mayonnaise from hard boiled eggs. This method offers a couple of advantages over homemade mayo: it overcomes the concern people may have about using raw eggs, and you don't have to worry about the emulsion breaking.
But does it actually taste like mayonnaise?
Recipe:
Blend together 3 hard boiled eggs, 1 TB (15mL) water, 1/4 cup oil of your choice (60mL), 1 tsp vinegar, 1/2 tsp Dijon mustard, and salt and pepper to taste. Store for up to 1 week in the fridge.
