Mok Ghai (ໝົກໄກ່) is chicken steamed in a banana leaf.

INGREDIENTS
1 whole Chicken
++ Gizzards, thinly sliced
++ Livers, do not cut too small
++ Hearts, cut in half

If you don't want to use the innerds above, use another whole chicken or just use half the amount of each of the following ingredients.

1/2 tbsp Salt
1 tsp MSG (optional)
3 tbsp Fish Sauce
1/3 cup Padek (fermented fish sauce)
1/2 cup Sticky Rice, soaked 30 min. or longer
15 Kaffir Lime Leaves, thinly sliced
20 Shallots
3 stalks Lemongrass
1.5 cups Bean Thread Noodles (optional)
