In the following, I will present to you my recipe for Cauliflower with Sweet and Sour Bell Peppers for winter, step by step and everything you need to know to make it.
Although you might be tempted to make a recipe for pickled bell peppers without boiling, well this recipe preserves them very well for a longer time and they remain crispy throughout the preservation period.

Ingredients:
- 3 kg whole bell peppers, which will be cleaned and washed very well;
- 1.5 kg cauliflower;
- 18-20 celery leaves;
- horseradish (cut into pieces, see video);
- 300 ml 9% vinegar;
- 90 ml sunflower oil (optional, but helps with taste and preservation);
- 10 small bay leaves;
- 9-10 grams of pepper;
- 9-10 grams of mustard seeds;
- 100-150 grams of sugar (sugar reduces the acidity of the vinegar, add to taste);
- 30 grams of salt (or to taste);
- 2-3 sliced apples (for the flavor of the pickled bell peppers);
- 1.2 - 1.5 liters of water (the amount of liquid may vary depending on how well the bell peppers are arranged in the jars, but without pressing them);

Preservation method:
Thoroughly wash the jars, put the jars in the oven and leave them for 15-20 minutes in the preheated oven at 150-170 degrees Celsius. Take them out one by one (4-6 jars at a time), fill them with the hot mixture (everything I want to put for winter), close the jar with a new lid (different every year) to be airtight, and put them under a blanket for 3-7 days to cool gradually. I have known this method for 20 years, I have been personally applying it for about 15 years, and so far I have not had any problems with the preserves. Everything I put for winter does not contain preservatives, aspirin, or excessive oil.
