It is one of the most famous and oldest cheeses. It was already valued by the ancient Romans. It is about him that one of the historical anecdotes mentions leaving the cheese in the cave for several weeks. According to this message, once again by chance, a new type of cheese was discovered. The original name applies only to cheeses matured in natural caves in Roquefort-sur-Soulzon and traditionally made from sheep's milk.
