#ColdMixDish Chicken is more tender poached than steamed, remember to prepare the ice bath so that chicken skin will be crunchy!

Step 1
Prepare a pot of boiling water; add green onions, sliced ginger, salt, no MSG added chicken powder and chicken thighs.
Step 2
Lower heat when water boils again and cook for 5 minutes, turn off heat to poach for 15 minutes.
Step 3
Wash and peel yam bean, cut into drinking straw’s size, peel carrot, julienne cut carrot and cucumber.
Step 4
Prepare ice bath for chicken thighs.
Step 5
Prepare sauce: small amount of broth from poached chicken, add no MSG added chicken powder, small amount fish sauce, sesame oil and mix well.
Step 6
Fry sesame until golden yellow and aromatic.
Step 7
Pour hot oil over green onions and cilantro.
Step 8
Shred chicken thigh and slice the skin.
Step 9
Mix together shredded chicken, green onions, cilantro, yam bean, carrot, cucumber in a big bowl, add sauce and mix well, place on a serving plate, put chicken skin on top and sprinkle with sesame.
