Have you ever made your own pasta? Unlike what most people believe, it's quite easy and fun to do. This version is based on red lentils, which are super cheap and easy to find anywhere.

Lentil pasta is amazing, but it can be a bit pricey and depending on where you live, chickpea or lentil pasta can be difficult to find. So we figured, why not share a simple recipe that you can follow to make your lentil pasta that is gluten-free as well and super high in protein.

Ingredients

2 tbsp ground flax seeds
6 tbsp water
1 cups of red lentils
1/2 cups of buckwheat flour
1/2 cups of rice flour
1/2 tsp sea salt
1 tbsp olive oil
12 tbsp water

Cooking steps

1. Prepare the flax seed egg by mixing the flax seeds with 6 tbsp water and let it sit for 15 minutes.
2. Make the red lentil flour by blending them in your blender. Pour through a sieve to get rid of the big chunks.
3. Mix the red lentil flour with the dry ingredients. Then, add the oil, water and flax seed egg.
4. Knead with your hands into a firm ball of dough. Let it rest for 10 minutes.
5. Spread flour on your kitchen surface, use a rolling pin to flatten the dough (use half of the dough ball first.)
6. Cut the edges off to get a rectangle.
7. Cut into long noodle shape.
8. Bring water to boil, add salt. Boil noodles for 5-6 minutes.
9. Serve with your favorite type of sauce.
