Ingredients for Semi-Prepared Cutlet:
3.5 kg pork cutlet;
- 100 g non-iodized salt;
- 15 g peppercorns;
- 15 g granulated garlic;
- 15 g dried thyme;
- 5 bay leaves;
- 5 g dried oregano;
- 5 g coriander seeds;
- 5 allspice berries;
- 3 g chili flakes;
- 5 g sweet smoked paprika;
- 50-60 g sugar;
- 3 g baking soda;
- 1 l water;

We marinate the meat for about 24 hours, then we put it in the oven at 100 degrees for about 3 and a half hours, after which we wash the meat and leave it in the cold for 12-24 hours until serving.
