Basically, a smoker is simply an oven fired with wood or coal, in which meat or even other food is cooked in hot smoke - for hours. If you choose a smoker, you won't be rushed, even when it comes to building it.
Marco Eyl from Obersteinebach in the Westerwald region of Germany built his first smoker eight years ago - and now makes around 50 different models a year. For us, he builds his classic: the "20 inch Longhorn To Reverse". The basic material is five-millimeter-thick sheet steel, then it's laser cutting, punching, rolling - sparks fly for hours. When all 279 individual parts are one at the end, the result is a barbecue smoker that won't be knocked down in a hurry.
