This kitchen adventure was all about trying new things and preserving our 2023 tomato harvest. I had 20 lbs of organic homegrown Roma and San Marzano tomatoes that I needed to get out of my freezer and I decided tomato sauce and homemade lasagna was the way to do it. We also make ricotta cheese for the first time together since I wasn't able to find an organic option in my grocery stores. It was surprisingly easy!
I am so happy with how everything turned out despite a bit of poor planning on my part 😅. The ricotta was AMAZING, both sauce recipes came out great, and my family loved the lasagna. Let me know if you've ever made your own ricotta cheese. I would love to know any tips and tricks because I will definitely be making it again!
