Sindhi Koki

Ingredients
Whole wheat flour (atta) - 2 cups
Gram flour (Besan)- 2 tbsp
Salt - 1 tsp
Ghee - 4 tbsp(for moin)
Ghee - 3 tbsp for cooking
Black pepper powder - 1 tsp
Red chilli powder- 1 tsp
Carom seeds (Ajwain) - 1 tsp
Cumin seeds (Jeera)- 1 tsp
Finely Chopped onion - 1 small
Freshly chopped coriander leaves - 2 tbsp
Finely chopped green chillies - 2

METHOD
-In a parat add the flour and add besan.
-Now season with salt, black pepper powder, chilly powder, jeera, ajwain, chopped green chillies, finely chopped onions, freshly chopped coriander leaves.
-Now add ghee.
-Rub the dough to get a crumble-like texture.
-Add little water to make a tight dough. Ensure there is not much kneading.
-Divide the dough into equal portions.
-Roll into a thick roti using some dry flour if needed.
-Prick the roti with help of a fork.
-Place the koki on a hot tawa & cook it on a slow flame.
-Cook till golden brown on both sides using more ghee.
-Serve immediately as a snack with tea or a breakfast with yoghurt and papad.
