My pal Sarah asked me to whack up a lil Mexican vegan number so I rustled up this bad boy.

Pico De Gallo.

Handful of cherry tomatoes - finely chopped
Half red onion - finely chopped
One small chopped chilli - finely chopped
Small handful of chopped coriander
Half a lime
Pinch of salt

Taco Seasoning

Teaspoon cumin
Half teaspoon cayenne or chilli powder
Half a teaspoon of onion powder
Half a teaspoon of garlic powder
Chilli flakes
Teaspoon smoked paprika

Vegan Chipotle Mayo
Vegan Mayo 2 tablespoons
Chipotle paste 2 teaspoons
Squeeze of lime


Taco mix

Half red onion
Tin of green lentils
2 tablespoons tomato puree
Splash of water
Half a veg stock cube
Olive oil
Salt
Spice mix
