Dark Ganache:
1 1/4 cups heavy (whipping) cream
21 oz / 600g dark chocolate

Milk Ganache:
1 1/4 cups heavy (whipping) cream
23oz / 650g milk chocolate

White Ganache:
1 cup heavy cream
25 oz . 700g heavy (whipping) cream
