The Story Of Maddur Vada

According to legend, the Maddur vada was born 103 years ago because of a minor culinary catastrophe. The year was 1917 and Ramachandra Budhiya, an entrepreneur from Kundapura had just set up a restaurant in Maddur's only railway station.

मद्दूर वड़ा (कन्नड़: ಮದ್ದೂರು ವಡೆ) एक प्रकार का वड़ा होता है और केवल कर्नाटक राज्य विशेष के खानपान में आता है। इस अल्पाहार का नाम कर्नाटक राज्य के मांड्या जिला के मद्दूर कस्बे से आया है। यह शहर बंगलुरु एवं मैसूर शहरों के बीच बसा हुआ है और मद्दूर वड़े इन दोनों के बीच रेल मार्ग एवं सड़क मार्ग पर बसों व रेलों में बेचा जाता है। यह चावल के आटे, सूची एवं मैदा से बनता है। इसमें कड़ी पत्ता, कसा हुआ नारियल, हींग एवं बारीक कटी प्याज भी पड़ती है। सभी चीजों को तेल में हल्का छौंक लगा कर भूना जाटा है और फिर कुछ पानी के साथ मिलाकर गूंधा जाता है। तब इसके बड़े बनाये जाते हैं और सुनहरे भूरे रंग होने तक तेल में तले जाते हैं।
