10 medium potatoes
150 g green beans
15 cherry tomatoes
10 spring onion
Q.b. salt
Q.b good extra virgin olive oil
q.b black pepper
q.b Oregano
q.b balsamic vinegar in cream
q.b parsley

let's start cooking the potatoes:
Step 1
To make them perfect, place them in the pressure cooker, put the lid on and since the valve starts to bleed, cook them for 18-20 minutes, always check the cooking point with a fork, they must be cooked but still crunchy
Step 2
once our potatoes are cooked, pour them into a bowl and pass them immediately under cold water, this operation will block the cooking of the potatoes and so they will remain crunchy, peel them and set them aside
to cook green beans to perfection
Step 3
start cleaning the green beans by eliminating the tips that are harder, you will easily notice until you remove them (see the video recipe to better understand), then wash your green beans in plenty of cold water
Step 4
put on the fire a pot with plenty of water, and as soon as it comes to a boil, insert the green beans, put a little salt, and cook over high heat for a quiet time between 12 and 15 minutes, it depends a lot on the size of the your green beans, do the fork test, I recommend they must be cooked but still crunchy
Step 5
once the green beans are cooked, to keep them of their natural color and therefore emerald green, you must immediately pour them in water and ice, this step is essential both to stop cooking the green beans, but even more so to maintain their natural color, I recommend cmq to rinse again a couple of times under cold water
Step 6
now we can compose our salad, then cut the potatoes into wedges or slices and as you prefer and place them on a serving dish,
Step 7
also cut each green bean in half and place it here and over the potatoes
Step 8
cut the cherry tomatoes into 4 wedges and do the same
Step 9
finally the onion and seasoned with salt, pepper, oregano, parsley .... and finally a good drizzle of good extra virgin olive oil and balsamic vinegar in cream, and enjoy your meal ❤️
