Hi guys! Check out my Chicken Katsu with Japanese Curry video. This recipe can easily be turned into a Vegan Katsu Curry by subbing chicken for tofu or any other meat substitute. This is a Chicken Katsu Curry that you do not want to pass on. It's so good and comforting. Perfect for any cold day. Give this recipe a try!

Ingredients (Serves 2 people with some extra curry):
5 shiitake mushrooms
4-5 small potatoes
1 medium carrot
1/2 pack of Japanese Curry paste (the one I used came with 2 containers, and I only used one of them)
3 cups of stock ( I used vegetable but any would work)
1 inch knob of ginger
3 garlic cloves
2 chicken thighs
For breading:
1 egg + 2 tbsp of water
1 cup of panko
1 cup of flour
