⏩Ingredients for the Christmas cake or fruitcake:
120 gr of all-purpose flour (1 Cup - 2 Tablespoons).
30 gr of Cornstarch (3 Tbsp).
4 gr of Baking Powder (1 1/4 tsp).
3 Eggs (150 gr).
120 gr of unsalted butter.
150 gr of Caster Sugar or granulated or refined white sugar (3/4 Cup - 1 Tbsp).
1 tsp vanilla essence
17 gr of Honey (1 Tbsp)
1/4 tsp of salt.
orange or lemon zest.

Fruit filling:
50 gr of crystallized fruits (1/4 cup).
50 gr of Raisins and/or Blueberries (1/4 cup).
70 gr of Cherries in syrup (1/4 cup +2 tablespoons).
100 gr of Walnuts and/or Almonds (3/4 Cup).

Coverage:
120 gr (1 Cup of icing sugar).
1 tablespoon or a little more lemon juice
1 Tbsp or a little more orange juice.
a little lemon and orange zest.
Nuts and cherries to decorate.

⏩Tips and Recommendations:
1. For this cake, use only butter and do not add milk or juice because we want it to be a thick mixture so that our nuts do not sink to the bottom.
2. If you don't have cornstarch, simply use 30 gr of powdered milk or 30 gr more of flour.

4. It is important to mix the nuts with flour very well, make sure that they are all well coat with flour and if necessary pass them through a sieve to remove excess flour. All this will help your fruits not go to the bottom.
