We're making our sausage pepper egg cups and talking about the importance of a high protein breakfast. Getting enough protein is key for all individuals, especially growing kids. Protein can reduce appetite and cravings throughout the day, balance blood sugar levels, increase skeletal muscle mass, and optimize your metabolism. Breakfast cereals, toaster waffles, pancakes and other breakfasts marketed at children are high in carbohydrates which can lead to inattention and hyperactivity. Aim for at least 15 g of protein at breakfast for children to reap the benefits of enhanced concentration and focus. This recipe is a great way to pack in protein in a portable and convenient delivery that you can eat cold or quickly reheat in the toaster oven for an easy breakfast!

INGREDIENTS:

1 lb pork sausage season with salt and pepper
1 Tbsp grassfed butter
1.5 cups red bell peppers
½ red onion
2 Tbsp oregano, stemmed and chopped
4 Tbsp basil, stemmed and chopped
10 eggs
1/4 cup heavy cream
½ tsp white pepper
½ tsp sea salt
1/2 cup shredded raw cheddar

DIRECTIONS:

Brown sausage. In a separate pan, add butter, caramelized onion, and red bell peppers for about 4-5 minutes, add salt once peppers are coated in fat. Combine the pepper and onion mixture with the sausage.
In a medium sized bowl whisk eggs, cream, salt, white pepper, shredded raw cheddar, and add majority of the oregano and basil. Reserve some herbs for toppings.
Scoop 1/3 cup of sausage mixture into lined muffin tins. Pour about 1/3 cup of the egg, herb and cheese mixture on top of the sausage mixture. Bake at 375F for 18-22 min check at 15 min.
