To Make Schezwan Sauce

Red Chilli - 100 Gms
Kashmiri Chilli - 50 Gms
Water - 3 Cups
Oil - 1 Cup
Garlic - 3 Tbsp
Ginger - 3 Tbsp
Hot Water - 1/2 Cup
Salt - 1 Tsp
Pepper - 1 Tsp
Soy Sauce - 2 Tbsp
Vinegar - 2 Tbsp
Tomato Ketchup - 2 Tbsp
Sugar - 1 Tsp

Method

1. Take 100 gms of regular chillies and 50 gms of Kashmiri chillies.
2. Remove the stock from the chillies
3. To a pot, add three cups of water, add 100 gms of red chillies and 50 gms of Kashmiri red chillies.
4. Let the chillies get cooked for 15 minutes.
5. Once chillies are cooked, turn of the stove and strain the water.
6. Once cooled, transfer it to a mixer jar and grind it, You can add the cooked chilli water if required.
7. Transfer it to a bowl and keep it aside.
8. To a wide pan, add four tbsp of oil , add three tbsp of finely chopped garlic, three tbsp of finely chopped ginger and saute.
9. Then add the chilli paste and mix it together. Add half cup of hot water and mix well.
10.Add one tsp of salt, one tsp of pepper powder, two tbsp of soya sause, two tbsp of vinegar, two tbsp of tomato ketchup and one tsp of sugar.
11. Add a cup of oil and mix it with the chilli paste.
12. Switch off the stove, cool it completely, store this in an air tight container , store it in a refrigerator and it will be good for 2 -3 months.
