1 large carrot (julienne)
Scotch bonnet peppers
Bell peppers
1 onion
Pimento peppers (for flavor) if available
Pimento seeds (8-10)
2 gloves garlic
Fresh thyme
1/2 cup white vinegar
1 tbsp sugar
Pinch of salt and black to taste
