oyster mushrooms_ 5-6 large or mixture of size

AROMATICS
shallots, skin on_ 2-3 bulbs
garlic, skin on_ 3-4 cloves
bird’s eye chilies_ 3-4

HERBS
cilantro, chopped_ about 2 Tbsp
scallion, chopped_ about 2 Tbsp

SEASONING
salt_ about 1/2 tsp
fish sauce_ about 1 Tbsp (depends on the saltiness of brand used)
