"Welcome back to our channel! Today, we're going to make a classic Indian breakfast dish: Aloo Puri. This delightful combination of fluffy, golden puris served with a spicy and flavorful potato curry is sure to tantalize your taste buds. Let's dive into the recipe!"

Ingredients:

For the Puri:

2 cups whole wheat flour
1 tbsp semolina (optional, for extra crispiness)
Salt to taste
Water (as needed for kneading)
Oil for deep frying
For the Aloo Sabzi:

4-5 medium potatoes, boiled and peeled
2 tbsp oil
1 tsp cumin seeds
1 tsp mustard seeds
A pinch of asafoetida (hing)
1 onion, finely chopped
1-2 green chilies, slit (adjust to taste)
1 tsp ginger-garlic paste
1 large tomato, finely chopped
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Water (as needed for the gravy)

Step-by-Step Instructions:

1. Preparing the Dough for Puri:
"First, let's prepare the dough for our puris. In a large mixing bowl, add 2 cups of whole wheat flour. If you like your puris extra crispy, you can also add 1 tablespoon of semolina. Add a pinch of salt to taste."

Tip: "Semolina helps in making the puris more crispy, but it's optional."
"Gradually add water and knead the mixture into a smooth and firm dough. Cover the dough with a damp cloth and let it rest for about 15-20 minutes."

2. Rolling the Puri:
"Once the dough has rested, divide it into small, equal-sized balls. Take one ball at a time and roll it into a small, round disc using a rolling pin. The puris should be about 3-4 inches in diameter and not too thin."

Tip: "Make sure the puris are evenly rolled to ensure they puff up nicely when fried."
3. Frying the Puri:
"Heat oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small piece of dough into the oil; if it rises to the surface immediately, the oil is hot enough."

"Carefully slide a rolled puri into the hot oil. Gently press it with a slotted spoon, and you'll see it puff up beautifully. Flip it and fry until it's golden brown on both sides. Remove the puri and drain it on paper towels to absorb excess oil. Repeat this process with the remaining dough."

4. Preparing the Aloo Sabzi:
"Now, let's make the flavorful aloo sabzi. Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and 1 teaspoon of mustard seeds. Let them splutter, then add a pinch of asafoetida (hing)."

5. Sautéing the Vegetables:
"Add 1 finely chopped onion to the pan and sauté until it turns golden brown. Next, add 1-2 slit green chilies and 1 teaspoon of ginger-garlic paste. Sauté for a minute until the raw smell disappears. Add 1 large finely chopped tomato and cook until it becomes soft and mushy."

6. Adding Spices and Potatoes:
"Now, it's time to add the spices. Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1 teaspoon of coriander powder. Mix well. Add the boiled and peeled potatoes, breaking them into chunks or slightly mashing them for a thicker gravy. Add salt to taste."

7. Simmering the Gravy:
"Add water as needed to get the desired consistency of the gravy. Usually, about 1-2 cups of water should be enough. Bring the mixture to a boil, then lower the heat and let it simmer for about 10-15 minutes, allowing the flavors to meld. Finally, add 1/2 teaspoon of garam masala and mix well."

8. Garnishing:
"Garnish your aloo sabzi with freshly chopped coriander leaves for a burst of freshness."

Serving:
"Your delicious aloo sabzi is ready to be served with the freshly fried puris. A side of pickle, yogurt, and some sliced onions complements this dish perfectly. Enjoy your Aloo Puri!"
