To Make Spicy Coriander Chutney
Sesame Oil - 4 Tsp
Chana Dal - 3 Tbsp
Urad Dal - 3 Tbsp
Cumin Seeds - 1 Tbsp
Red Chilli - 10 Nos
Green Chilli - 4 Nos
Garlic Cloves - 15 Nos
Coconut Bits - 1 Cup
Tamarind
Coriander Leaves - 2 Bunch
Rock Salt - 1 Tsp
Hing / Asafoetida - 1/4 Tsp
Water
For Tempering
Oil - 1 Tbsp
Urad Dal - 1/2 Tsp
Mustard Seeds - 1/2 Tsp
Red Chilli - 1 No.
Hing / Asafoetida - 1/4 Tsp
Curry Leaves
METHOD:
1. Take sesame seeds oil in a pan.
2. Add chana dal and urad dal. Roast until they are golden brown in color.
3. Then add cumin seeds and mix.
4. Add red chillies, green chillies and roast for about 1 minute.
5. After 1 minute, add garlic cloves and fresh coconut bits. Saute for 2-3 minutes on a medium flame.
6. After 3 minutes, add tamarind bits and mix.
7. Lastly add the coriander leaves and saute.
8. Add rock salt and hing. Mix well.
9. Once the coriander leaves are shrinked, turn off the stove and cool the ingredients completely.
10. Grind the cooled down ingredients into a really thick chutney with the help of very little water.
Keep it aside.
11. For the tempering, take oil in a tempering pan and heat.
12. Add urad dal and mustard seeds. Once the mustards start splattering, add red chillies and hing.
13. Turn off the stove and add curry leaves.
14. Transfer the prepared tempering to the chutney/thuvaiyal.
15. Yummy and spicy coriander chutney is ready to be served hot and nice with some rice or any tiffin by the side.
