🍇 recipes:
bircher muesli (3 servings): 200g oats, 2 tbsp each sunflower seeds & flax seeds, big pinch of salt, 1 tsp cinnamon, 1 grated carrot, 4 tbsp apple sauce, 1 cup/250ml soy milk, 1 packet/400g soy yogurt

mustard dressing: 2 tbsp grainy mustard, 2-3 tbsp olive oil, 2 tbsp apple cider vinegar, salt, pepper, smoked paprika

marinated tofu:
peanut soy: 1 tbsp peanut butter, 1 tbsp soy sauce, 1 tbsp rice vinegar, pepper, grated ginger, water to thin
tahini dijon: 1 tbsp tahini, ½ tbsp dijon, 1 tbsp apple cider vinegar, smoked paprika, salt, pepper, water to thin

turmeric parpadelle: zucchini, garlic, turmeric, salt, parsley; topped with more parsley, tahini & lots of black pepper

pasta salad: pasta, crispy chickpeas, dill, chives, cherry tomatoes, bell pepper, red onion, arugula, pumpkin seeds, mustard dressing

tzatziki: 4 tbsp soy yogurt, ½ cucumber (grated and pressed), 1/4 red onion (finely diced), 1 clove of garlic, salt, pepper, parsley, chives

sumac-marinated salad: shaved kohlrabi, ¼ red onion, lettuce, salt, pepper, sumac, lemon juice, olive oil

sesame ginger chickpeas: 2 tbsp sesame oil, 1 tbsp soy sauce, 1 tbsp rice vinegar, black pepper, grated ginger

buckwheat porridge: ½ cup soaked buckwheat, 1 ½ cups liquid (soy milk & water mix), pinch of salt (cooking takes around 20min); 3 tbsp soy yogurt stirred in after cooking
toppings: stewed cherries, tahini, chopped pistachios, flakey salt

quinoa fritters: around 280g cooked quinoa, 2 cans black beans, fresh parsley, 1 tsp each cumin, chili, smoked paprika, salt, pepper, 3 tbsp chickpea flour

*most snacks are not included in this video
