Alu posto" is a delicious Bengali dish made with potatoes and poppy seeds paste. Here's a simple recipe for alu posto:

Ingredients:

3-4 medium-sized potatoes, peeled and cubed
3-4 tablespoons poppy seeds (khus khus)
2-3 green chilies, chopped
1 teaspoon pachforon
1 dried red chilies
2 tablespoons mustard oil or vegetable oil
Salt to taste
Sugar to taste (optional)
Fresh coriander leaves for garnish (optional)
Instructions:

roast poppy seeds little bit. roasted poppy seeds grind the poppy seeds to a smooth paste using a blender or mortar and pestle. You can add a little water while grinding if needed.

Heat oil in a pan or kadhai over medium heat. Add mpachforon and dried red chilies. Let the pachforon splutter.

Add the chopped green chilies and sauté for a minute.

Add the cubed potatoes to the pan and stir well to coat them with the oil.

Reduce the heat to low and cover the pan. Cook the potatoes for about 5-7 minutes until they are partially cooked.

Once the potatoes are partially cooked, add the salt to taste. Mix well.

Carefully add the poppy seed paste to the pan. Stir well to combine the potatoes and poppy seed paste.

Cook the mixture on low heat for another 5-7 minutes, stirring occasionally, until the potatoes are fully cooked and the poppy seed paste thickens.

If the mixture becomes too thick, you can add a little water to adjust the consistency.

Taste the alu posto and adjust the salt. If you prefer a slightly sweet taste, you can add a pinch of sugar at this stage.

Garnish with fresh coriander leaves if desired.

Serve alu posto hot with steamed rice.
