Reforma is known as the queen of cakes, and indeed, she is special. It is one of the few that has kept its 'status' even today. It is also known for being more difficult to make, which is actually not true at all if we know a couple of the most important tricks. I spent years trying different variants and finally formed this recipe that I am proud to present to you :)
REFORM
Phil:
- 14 egg yolks
-150g of sugar
-350g of butter
-300g of chocolate
The most important thing is to melt the butter and chocolate together.
In another pan, steam the previously beaten egg yolks with sugar, until it thickens a little, with constant stirring. Remove from the stove and add the melted chocolate and butter inside. Mix with a whisk or spoon until completely combined. Leave it first at room temperature to cool, then in the refrigerator to set but not too much, so that it is spreadable.
Peels:
- 14 egg whites
-250g of sugar
- 400g of ground walnuts
- a little salt
Divide all the ingredients into two parts and mix 7 egg whites with half the amount of sugar and a little salt, but do not make it stiff. Add half a walnut and mix by hand. Place on parchment paper in the largest pan, and bake at 180' between 12-15 min.
Repeat the process with the next crust.
When they are baked, cut the skins lengthwise with scissors into 3 equal parts. A total of 6 crusts are obtained.
Spread approximately one-sixth of the filling on the first crust and so on until the end, crust-filling-crust-filling... If you want, you can put some additional chocolate cream or decoration on the last crust and around it.
Leave it to harden in the refrigerator and enjoy the unique taste of the irresistible Reforma!
Because when it's tastiest, it's Mmm BRE!
P.S. The measurements can all be cut in half to make a 3-crust Reforma. It will only be smaller
